WIC Project FRESH coupons expire

Last chance to use Project FRESH coupons

Calling all WIC Project FRESH coupon holders! The Branch-Hillsdale-St. Joseph Community Health Agency wants to remind tri-county residents that all WIC Project FRESH coupons expire on October 31st. WIC Project FRESH coupons can be used to buy eligible, locally grown, fresh, unprepared fruits and vegetables from authorized farmers, farmers' markets and roadside stands. WIC participants are encouraged to use all their coupons during the season to help meet their special nutritional needs. They are especially encouraged to buy broccoli, carrots, potatoes, squash, peaches, apples and tomatoes. A variety of produce rich in vitamins A, C, and folic acid are emphasized. 

“This is your last chance to get fresh, in-season fruit and vegetables from your local farmers markets,” says Yvonne Atwood, Director of Personal Health and Disease Prevention. “With fall produce like apples and zucchini, it creates an entire new category of recipes to try with your little ones at home.” See the following snack and appetizer recipes to get the most out of your last few WIC Project FRESH coupons.

Baked Zucchini Sticks (serves 8)
Ingredients:
• 4 medium zucchini
• 2 eggs
• 1/2 cup water
• 1/4 cup finely grated parmesan cheese
• 2 cups crisped rice cereal crushed to 1 ½ cups
• 1 Tablespoon dry Italian herbs

Instructions:
• Cut zucchini into long sticks, about 3 inches long.
• Microwave zucchini for about 3 minutes. Pat zucchini sticks dry with a paper towel.
• Mix eggs and water together in a small bowl. Mix cheese, cereal and herbs together in another small bowl.
• Dip zucchini sticks first into the egg mixture and then into the cereal mixture.
• Arrange zucchini in rows on a metal baking sheet that has been sprayed with cooking spray. Broil zucchini sticks for about 12 to 15 minutes, turning once while cooking.
• Refrigerate leftovers within 2 hours

Sweet Potato Fries (serves 6)
Ingredients:
• 4 medium sweet potatoes
• 1 1/2 tsp paprika
• pinch salt
• pinch pepper
• 1/8 tsp cayenne pepper (optional)
• 1 tbsp canola oil
• non-stick cooking spray

Instructions:
• Preheat the oven to 450 degrees.
• Scrub and rinse potatoes. Cut into thick strips that are about ½ inch wide. Place into the large bowl.
• Sprinkle the paprika, salt, pepper, and cayenne pepper over the sweet potatoes. Drizzle the oil over them and toss well until coated.
• Spray baking sheet with cooking spray and spread potatoes on it in a thin single layer. Bake for 15 minutes, remove and turn fries over, then bake for 10-15 more minutes until fries are cooked through and crispy.
• Let cool and serve.

Notes:
• For easier cleanup, line the baking sheet with tin foil
• White potatoes can be used in place of all or part of the sweet potatoes
• Sprinkle 1 teaspoon of cinnamon (in place of paprika and cayenne) over the fries for a different flavor
• Peel potatoes if desired

Veggie and Corn Fritters (makes 14 patties)
Ingredients:
• 1 cup carrots, shredded 1 to 1 1/2 carrots
• 1 cup zucchini, shredded
• 1 cup shredded potatoes
• 1/2 cup thinly sliced onion
• 2 tbsp parsley, chopped
• 2 cups corn flakes crushed to one cup
• 2 eggs
• 1 tsp salt
• 1/4 tsp black pepper
Instructions:
• Combine all the ingredients together in a bowl.
• Form vegetable mixture into small flat patties.
• Heat 1 tablespoon oil in a skillet. Cook patties on both sides over medium heat for about 8 minutes.
• Refrigerate leftovers within 2 hours.
